Red Velvet Cupcakes

I made red velvet cupcakes over the weekend and was happy with the end product.

Ingredients

140g self-raising flour
150g caster sugar
2 tbsp cocoa
110ml buttermilk
Half tsp bicarbonate of soda
1 tsp vinegar
Half tsp vanilla extract
1.5 tbsp red food colouring
60g butter at room temperature
1 large egg
Pinch of salt

This sort of cupcake is better to have cream cheese frosting on top

300g soft cheese
60g butter at room temperature
1 tsp vanilla extract
240g icing sugar

You can always put less icing sugar if you think it's too sweet.

Instructions for the cupcake

1) Preheat the oven to 170C/325F/gas mark 3. Line a 12-hole cup cake tin with cases.

2) Mix together the flour, cocoa, bicarb with a pinch of salt. In a separate bowl, mix the buttermilk, vinegar, vanilla and red food colouring.

3) Whisk the butter and sugar together until pale and fluffy. Add the egg and continue mixing.

4) Add the flour mixture and the buttermilk mixture into your pale and fluffy butter mix. Mix it well with an electric mixer so that it is even.

5) Divide the mixture between the paper cases using ice cream scoop. Bake for 20 minutes, until risen and springy - Don't overcook the cupcakes.

6) Cool on a rack.

Instructions for the cheese frosting

Easy, just mix everything together with an electric mixer and chill it in the fridge until your cupcakes are ready for its frosting.

As the topic says "TAU FU FAH"! Yes I made it and I'm happy to share the recipe! Proven success!!!

Recipes are taken from all over the internet.

Tau Jeong Sui "Soya Milk" Recipe

240gm soya bean (soak overnight or about 5 hours with hot water)
1800 ml water
Muslin cloth
Sieve
Sugar

1) Throw away the water used to soak the beans
2) Blend soaked soya bean with water (1800ml); half it to blend unless you have a uber huge blender
3) Squeeze all the juice out using muslin cloth and sieve (to stop any husk going into the pot)
4) Throw all the husk away
5) Boil the soya milk
6) Once it's boiling, remove the bubbles
7) Repeat step 5 & 6 up to three times
8) Add sugar to taste

Tau Fu Fah (Soya Pudding) Recipe

1 ltr of soya milk (recipe above without adding sugar)
Gula Melaka

Hardener
1/2 teaspoon Gypsum Powder (in chinese it is called sek ko fan)
1 tablespoon of corn starch
63ml of water

1) As mentioned before, boil the soya milk 3 times and remove any bubbles on the top
2) Mix the ingredients for the hardener
3) Pour the hardener into an empty pot (with lid)
4) Pour the soya milk into the hardener (make sure you pour the soya milk at about 1 feet high or more; this is so that it will mix properly)
5) Use a dishcloth to cover the pot and put the lid on top
6) Leave it for about 30 mins without opening or checking or moving the pot
7) After 30 mins, your pudding is now ready to be served
8) Add gula melaka to taste

Pimple on the eye!

After using the simple product, I started to get pimples near my eyes ... so for those with uber sensitive skin, DO NOT USE IT!

The area near my eye hurt like crazy cause of that pimple ... tsk!

I am only going to use the roll on now and see how it goes ...

CLINIQUE facial wash was good ...my skin is sooo sensitive but clinique did the trick! bravo for researching on a product that works on skin like mine ... keep it up! Can't wait to try the age defense cream after I've used up my little tiny bottle of moisture cream...

Ginger & Juniper

I finally bought my Ginger & Juniper oil ... The smell is so relaxing .... I spend at least an hour a night before sleeping just enjoying the oil and de-stressing myself... I also try to push out any negative thoughts I have ....

I love Neal's Yard product, they are 100% organic therefore no other added mojo's!!!

Somehow I tend to blog only when I have my assignments ... hehe!! This time my assignment is on company innovation and how is that a key feature to their organisation. I have to analyse a few different companies and compare them ... It's scary since assignments are due in 3 weeks and I have not started! =/

Once a last minute, always a last minuter! =P

So panicking I went to buy two new items that will help (suppose to) reduce dark circles under my eyes!!

a) Simple Daily Radiance Eye Cream which is for people at our age (20++) - nights and mornings

b) Garnier roll on - On the go kinda product

Although I would love to try a few products from Neal's Yard range - especially the massage oils!

The trip to LCCT, KL was operated by Air Mauritius instead of AA - this was due to the planes not delivered on time thus AA needed to lease the planes from AM instead. It was a smooth ride, food and entertainment on board was UTMOST IMPORTANT {FREE} ...

OK now for the return -- back to London STN. This time it was Air Asia X. I must say that I was surprised that the insides of the plane was new & clean. Although delay is the thing that happens a lot with Air Asia but I guess that won't stop anybody using it as their tickets are cheaper than MAS or any other airline that will fly to Malaysia. Stansted is an awesome airport I must say, they don't have rude staff unlike Heathrow.... btw Heathrow Airport is the worst airport to go to....The Q is uber long and the officers are CRAP SHIT! Believe me, they are immigrants themselves as most of them working there are NOT ang mor .... When u walk into Heathrow airport, your first impression is "Is this UK?" 1 ang mor at the immigration desk also takde ....

Air Asia

Back to AA, I would suggest not ordering the food online even though you might save a couple of quid because you have a whole lot of choices ordering them on the spot. Be aware with paying with credit card as not all AA planes have the swipe machine. Bring a lot of cash with you (RM or GBP) as the food sold on board is SOOOO expensive. White coffee for RM5, water for RM4, snickers for RM5, etc.... They did say no outside food allowed but everyone just brought their own extra food as they serve their food about 1 hour after take off and 2 hours before landing --- there is a Looooong gap in between where the only thing you can eat is snacks that they have for sale (not a lot of choices).

Note: it is about 13 hours 30 min journey from KL to Ldn.

I love love love the legroom AA has in comparison with other airlines. I am short and I find it very cramp in other airlines so imagine the taller dudes and dudettes!!! I must say that the reclining seat is a problem for me. It will recline but not stay for long which is a pain for a 13++ hour journey. Back problem for me now!! =(

BIG SPACE

Entertainment onboard is important for people who cannot really sleep or easily bored ie ME. Thank god, Air Asia had this portable e-player in which you can watch some OLD movies, songs, games and TV shows. But be aware, it will only last 8 hours approx. so use it wisely and they have limited number of players therefore you will need to be fast!!! The cost haha, everything on AA is chargeable, luckily not the toilets!!! =P. Cost is RM35/GBP 5

The newer planes for Air Asia will be better as they will install the player behind the head rest like every other airline instead of handing out those e-player.

Overall, I enjoyed my journey and will defo use them again when I return to Malaysia next time... =)

OK! I had my birthday yesterday but I enjoyed it till today!! =D

I had good food consistently ... great company ... lovely friends! I will never forget such a great birthday and with an extra special Lex to celebrate with me ... just awesome!! Some of the photo's are posted on FB .... I din't take much because I was so busy eating that I forgot totally!!

Anyways, I will be back in Malaysia for 1 week (short) but I had to rush back to the UK .. a girl's gotta work to earn innit? I will have to work extra before christmas to pay up for all the holidays I took .... I had to cancel my birthday trip to Paris because of this Malaysian trip! =(

After that I will postpone all my hols until I get some time off .... I really need a real holiday where I don't do anything at all (just eat, sleep basically pigging) .....

I have been feeling insecure for a very long time and only now it seems to be getting worst... I fear of every little thing that happens .....

For example I had this feeling of being so afraid of driving which I never had before .... I was so eager to drive when I first got my license. After working in Glenmarie few years back, I had a sudden headache in the middle of a traffic jam and after that I was so scared of being in a jam while driving..... Now this time in 2009, I was even afraid of being a passenger in a jam ... I get so impatient that I wanted every car to move away so that the car I am in can move freely.

WHY? do I feel this way??

Another incident where we were driving and suddenly I realised we were lost ... I got so scared, I have no idea what I was scared of but I know I just wanted to go back home as soon as possible...

Every exams that I have to go through in UK, I realise my heart pumping really fast the night before .... I have this feeling that I cannot fail any paper and I have to pass it... I kept thinking that it is easy but actually in fact it's hard...

Has anyone ever felt that way before? Do you have negative feelings that make you so scared??

I really need to think positive but how can I erase the negativity and not worry about nonsense?

A little update on little Sarthy - been training him outside for many many days and finally RESULTS .... He is finally pooping outside .... although peeing is still in the house ... I'll take it slow since he has been a good boy .... I met the same couple who owns Arnie (another westie) and got her number - We are going to plan loads of play date together since her dog and mine are only 1 week apart in age ....

Dogs are much easier than babies (honestly) .... so if you want to see if your boyfriend/partner/husband can handle children, get a dog first and see his reaction ... if he has a bad temper towards the dog, it means children are not such a good idea .... ;)

Darn it, my throat is still blady hurting .... I still have my voice ... it's just that when I swallow something it hurts! bleh!!! I slept the whole day on Saturday and still feel awful!! I probably had too much booze on Friday night!! Was having mussels and scallops with a few bottles of alco!! I must say that was awesome dinner!!!

Now am listening to a replay/repeat of my fav songs especially Lady Gaga's Poker Face! I think that song is awesome especially the beginning "mum mum mum mah" and also "P-P-P poker face"...... KEWL SONG!!!

Sarthy hates it when I turn the music out loud!! Am just wondering if I could bring him back next time if I do go back for a longer trip!! He find the weather very hot now so am a bit worried he might not like Malaysia at all!! Poor Sarthy, need to groom him soon!! I want to get a shih tzu for Emilyah when she is older (that is if she likes dogs) .... I am sure she and Sarthy will get along well since he likes children so much!! I sometimes wonder why he likes children .... always running after them in the park!! O.o

I just love listening to the musics they have in World of Warcraft game!! Sometimes I just stand there for hours listening to the music!!! It's so soothing!!

I was sitting at the park yesterday during lunch and it was awesome!! Just trying to soak some sun!! I am as white as a snow flake now so need to get dark and even darker when I am back in Malaysia!!

Need to look more Malaysian than Chinese right? People keep mistaking me as a Chinese ... Do I look like I am from CHINA? I do get annoyed when people ask if I am from China, Japan, Thailand, Singapore .. anything but Malaysia!! hey I am proud to be Malaysian mate even though ........... (not going to discuss it here) ... They only think chinese people are from China!!! What an Ass!!

Have been trying to sleep .... so tired after wiping for many hours!!! But still waiting for my spring coat to dry!!! It's warm enough to wear spring clothes now!! wweeee!!! No more big chunky heavy jackets!!

Had a good lunch today at "Jom Makan", if you want to try it, go to trafalgar sq. it's very very close to the National Potrait Gallery...heard it's partly owned by Malaysian government (no wonder so close to cuti cuti Malaysia office) .... Lots of Malaysians but sadly NO PORK!! WHY WHY WHY?? IT'S UK FFS!! Not trying to be racist but somehow everyone seems to think that we (other religions or non believer) are not considerate of your feelings ... hmmm how weird - WHY THE **** are they turning DOMINO'S into a HALAL place in certain areas (IF that is not considerate ENOUGH) ... This is UK, you want to live here, you will have to follow their culture ... It's the same when someone comes into your country and you have this and that kinda rules (Don't hear them complaining DO YA?)

I feel so much better now after ranting....PMS prob!

Law assignments due date are postponed till next week .... Weeee another week to lepak!! ^^ happy beee!!!! weeeee!!!! Need to reduce raiding times next month onwards so that I can "study" ... Hate and love Marketing classes .... hate because all you do is bullshit, the better u bullshit the more customers u can get, love because i think it is the easiet subject (ez pz lemon squeezy) ...One assignment practically read the entire text book since you need to use all the theories in there and ways to do it ... I like a bit of challenge like doing something that is a little more difficult than marketing like financial, cost and managerial accounting, law (love some of the cases, very interesting although its like few hundred pages for one case)

Little Sartharion now sleeps on the bed with me instead of the floor .... It's much better as he sleeps like a pig on the bed and walks around on the floor at night!! he is so warm.....he is my pillow when I am cold!! Funny how dogs are suppose to be dirty but I just love the smell on Lex ... prob it's my perfume on him (which he hates) ... he always try to rub it off!! funny pup!

Being a student it's normal to leave things till the last minute and then go "AIYAK, sei lar, assignment due leh, how how?"

That is my life for the next couple of years until I grad once again! =.=

Am I going to study more? My answer is yes ermm maybe! I want to do more than just a degree ... What I've studied in Malaysia is no use in UK, not even recognised! Sigh! Only SPM is counted - It's known as O'Levels here! So GAMBATE D! You can do it!! ----> I shall continue dreaming for now !!!!

Ok! I am late in announcing on my blog that I have a puppy!!! 3 or 4 weeks late!!

Abt my new pup.....He is:

a) Extremely cheeky
b) Bites my stuff when I am not looking at him
c) Sleeps with his head on his bed and ass on the floor
d) Never I mean NEVER pees or poops outside
e) Only does part (d) in my toilet and not anywhere else
f) Never barks
g) screams only when you pull his beard (when he is naughty ofc)
h) He sleeps more than me - almost like 16 to 17 hours a day!
i) Eats all the time
j) Loves having paper as his dessert
k) Wants you to wipe his ass after he poops (if not, he does it on my bathroom mat =.=)
l) He is afraid of big dogs
m) He wonders why other dogs bark at him

That is abt all I could think about at the moment!! and nope not bringing him to Malaysia when I am home this summer .... He will stay with a dog sitter for the few weeks I am home!!!

I've always wanted a dog - Not "a" but 2 dogs actually....I wanted to name the male JAJA and the female Bynx .... unfortunetly I did not get any so far!!! In Malaysia, I would get JAJABYNX as shih tzu pair but in UK I might get a westie as they are much easier breed to find here! Although expensive but it is worth it ....

I have been looking around but still unable to find a breeder which has extremely cute puppies - yes I only want pretty ones ... some of the ones advertised look so ugly that it is not worth my time viewing them.... and NO I don't want mix breed as they try to sell the mix ones more expensive which I think is pretty stupid since you can get paria dogs all around .... in Malaysia it is almost always freee .... like our beloved dog coffey (may she rest in peace) =(

Suggestion - Never go out to eat on V-Day since the menus available are all Valentine menu...But I had a blast and spent around £120++ for food and drinks! It was a good experience and the food was awesome even though it is in tiny portions!
The restaurant is located in Covent Garden - A hip and must see area in London if you happen to visit

Called DVLA today to get a refund on my provisional license so that I can apply by post instead! So am now waiting for my cheque to be refunded then re-apply by post.....Don't make the same mistake I did - Online application is only for British citizens with the new passport....

My friend took the "life in britain" test last year and she passed!!! woohooo!! she can apply for her citizenship anytime she wants now ..... instead she changed her kids to british .... oh and my dearest sister is now a FINN!! I congratulated her already last year ... am truly happy for her!!! Onnittelu JC Vahiz!!!

My Finnish is still at the beginner level so am very lousy - Malufying if I talk in Finnish even to MCD cashier ------ It will be like this ---> "yyyykkkkksssiiiii maxi juuu juustooooo hampurilainen ateria, kiitos"

I feel so so so lazy to put my clothes on and get to work! I know I know (times are bad shit) but still I think I can do better than doing 9 - 5 kinda jobs!

I am studying now to work less in the future (YES, you heard me - LESS) ..... I am targetting 3 times a week sorta thing! and I know I can achieved that target if I study hard enough, get more books on company law and study it like crazY!!! I will be like the company's "adviser" so that they don't have to rely on Singapore to do it ... they can rely on me!! Muahahhahaha!!! I KNOW COMPANY LAW!!!

Welll - need to start dreaming first for now!!! ;)

I am taking my driving theory test soon since my blady Malaysian Driving License can't drive in UK or own a car in UK .... and if I want to buy a car, I need a license first! BAH!!! I probably get a second hand Merc since I don't want a new car (***** in Britain tend to be very jealous if they see a new car, they WILL blady scratch your car) so to be save - 2nd hand! no worries bout those crap shit!

After making Nasi Lemak yesterday, I suddenly have the urge to only eat burger today!! BAH!!

I just crave for some cheeseburger so instead of cooking today I ate out or take away to be precise.

Stop by MCD after work and got my cheeseburger with apple pie and not to forget my starbucks although I don't fancy it as much as coffee bean but that is the next best thing here.... luv luv luv CBTL more than starbucks (sorry to starbucky fans but I am pro-CBTL) ;)

Coffee bean will be the first thing I will have when I arrive Dubai/Malaysia...... The next time I am flying home - am going with Emirates since I heard it's GOOOD! so will most likely stay in Dubai for a couple of days (all depends if the ticket is cheaper than MAS)

Thank God it's Friday Yesterday!!!

Went to have some boooze last night, it was awesome, trying few different booze was great!!!

Going to Westfield (the biggest shopping mall in Europe) later to do some shopping - I still find Westfield not as big as our Midvalley Megamall or even BU! bah! I will take my camera along with me and will show you some pix of EUROPE's BIGGEST SHOPPING MALL! =)))

2009 Goal

2009 is here and I have achieved nothing in 2008. So what should I wish for in 2009?

FIRST - Finish my Business Diploma and passing everything
2 - Start my BA in BS (not Bull Shitting) but Business Studies/ BA in Finance
3 - Get a good bonus hopefully (I guess its hard since I am only working part time)
4 - Go on more holidays when I have more time
5 - Worry less about education
6 - Praying that people will give me less shit at work
7 - Praying for ending sob stories from people (Yes you know yourself)
8 - Not visiting any family members this year since my trip to them last was not enjoyable in their point of view
9 - Get angry less at people who tend to tick me off (YES work people)
10 - Try to enjoy this sucky job I have while it pays

To be honest, I like my technical department because the work that they give me is something that I could learn and it is enjoyable, most of them are Engineers so to be a "non" engineer (if that is what you call it) in the group kind of make me a noob but then again I learn so much from them compare to other people who give me crap shit - YES you other departments!!

8 - 12 = Exam week (it was a horror going through this and I really hate it)

24 - 26 = Had a LOT of housemate relatives around the flat. I must say it was a good Christmas Eve Dinner and Lunch. Presents not so good. Probably I am not likeable? since I only got body shop stuff which I truly hate!

26 Dec - 31 Dec = In Finland and just realised that my brother in law hates driving. Sigh! I guess he din't really enjoy our company since we had chinese almost all the time and he had to drive all the way to cottage and himos and back and my poor sister is tired all the time (bless). Had a good New Year Fireworks tho, first time ever been up close and personal to a lovely colourful fireworks. It was scary when the kids were playing and poor Nemu was so so so frightened most of the time anywayz. Lovely little dog!

1 = HAPPY NEW YEAR!!! Still in Finland - freezing cold part of the world.
2 - 6 = Still holidaying in Finland - Had spa, golf, bowling, movie in Flamingo, great dinners all around, try to enjoy kau kau before going back to UK

basically still in January and I feel that working life is going no where - I work too fast when I am at work - I can do things very quick and some people just take the whole day to do just that one thing I did in a couple of mins which sometimes I wonder is it because they want to drag their day or just they are too lazy??? I work part time but my work load is the same when I was working full time and now even more ------- see below complains

I am not doing what I like and certain colleagues thinks that since I never say "NO", they assume they can get me to do things that they can easily do it themselve like posting for example or watering the plants - Things that is not my job and NEVER did I request to get real plants (I on the other hand voted for plastic - no need to take care and still look pretty).....but I try to be nice and help even though I feel that it's not something I do or even if I don't pass the damn post box. WHY CAN THEY DO IT THEMSELVES and WHY CAN'T I SAY NO TO THEM??? WHY GOD WHY??? Now it's even doing filing for another department since they are so fucking lazy to do it their own which it's also not my job.... I know I now work part time (so no value??) - Don't lar give me additional crap shit jobs like this.

Should I quit or should I stay???

WEEKEND IS HERE!! woohooo!!

Friday evening is always the best day of the week!!! I am still thinking if I should cut my hair or not or just leave it long until the next time I go back.....

I want to watch "four christmases" today but then again it starts at 9pm so by the time it finishes it will be around 11 pm which is a little too late...

I can't wait to finish my exams in 1 week++ and then countdown to Christmas and to see my sister which I miss dearly!!!

Just wishing for a white christmas in Finland!!

Woo Hooo!! Went to Oxford Street today for some shopping therapy (need to maximise satisfaction)... Was in Chinatown first for some nice Malaysian food and then headed off to Marble Arch for my all time favourite hobby ---> SHOPPING

Bought this boots for myself and also a nightie as a present for me sister.

Need to start packing away my summer clothings and bring out my winter ones ... The weather has been a little warm lately so can't really wear my boots yet till it gets cooler. I am just hoping that winter will not be as cold as the many years I've experienced.

Not only have I to unpack stuff, I need to start on my assignments too instead of going to Azeroth every weekend.

It's the end of Monday!! I am suppose to be going off soon but decided to stay to blog a little.

Today's day was pretty much easy - only 4000 emails in my inbox to clear and a few budget entry to do and some stores/spares for a container vessel, also filling some forms for our vessel change of name.

My class is officially starting tomorrow and I am hoping to go through it. Just 2 years, tahan tahan!! *shrugs* ... I am beginning to take it a little slow and easy! After this week than I will know if I can manage both working and studying. It's a challenge although I have done it before but this time is different. I have to support myself - cook, clean, study, work, food shopping ... *shrugs*

It's 7am now and I am so excited!!! It it such a lovely day today.... Just thinking if I have anything else to do .... *panic*

Looking at the bags and the mess around *hmph* ... I really don't know how to clean anymore....I still have a lot of unpacking to do but will have to wait till my Ikea cabinet arrives....^^

I am just thinking what if I have to move back to Malaysia =.= .... I am already having problems moving from North London to South London. It is going to be worst to move back to Malaysia. All my things are piling up after being in UK for so many years ... I miss my family and friends ...
